Cosy Winter Cooking: Pheasant Stew, AGA Tips & Perfect Mash (Comfort Food How-To)

This week I’m sharing a proper winter warmer.

I take you with me to my favourite butcher, talk through how to prepare pheasant (or swap for chicken if you need to), and then cook on the AGA for a slow, comforting pheasant stew that’s full of flavour without being fussy. I also show you how I make my mashed potato - including my not-so-secret weapon - and chat through how I cook stews and potatoes on the AGA, using the ovens properly rather than just the hotplates.

It’s one of those calm, satisfying cooks that feels very 'Ask Charlie': nattering whilst cooking, a few real-life interruptions, and lots of practical tips you can actually use!

I’m especially excited about sharing how forgiving this recipe is, how well it freezes, and why this is one of the best ways to cook pheasant without it drying out. If you’re after comfort food that feels achievable and genuinely useful, this one’s for you.

Love, Charlie
