Cretan Orange Cake in the Air Fryer (Recipe from Our Holiday)

We had the most incredible orange and cinnamon cake on our last day in Crete, and I loved it so much that I asked for the recipe. It was handwritten on a scrap of paper, and this week I thought we could recreate it at home in my air fryer.

This is a proper Cretan speciality, light, fragrant with orange and cinnamon, and made with crumbled dried filo pastry instead of flour, which gives it the most unusual, delicate texture. I've soaked it in a orange and cinnamon syrup, a bit like a Greek take on lemon drizzle, and it needs a couple of hours to really soak through before serving. It's also the first in a new air fryer recipe series I'll be sharing and next week I will be sharing more Air fryer recipes since so many of you have asked for more ways to use it.
