Savoury Courgette & Tomato Tarte Tatin Recipe (Seasonal Cooking With Charlie)

This week I’m back in the kitchen making a courgette and tomato tarte tatin – a savoury twist on a classic dish. With a glut of fresh seasonal produce, it’s the perfect recipe to use up tomatoes and courgettes from the garden.

I show you how to make a quick, reliable pastry (using my Magimix, though you can easily make it by hand), caramelise onions with balsamic and honey, and layer everything together with thyme and feta. The result is a rustic but delicious dish that’s simple, seasonal and full of flavour!

I also share a little about my beloved Aga and why I wouldn’t be without it, along with tips on using homegrown herbs and even saving veg scraps for stock.
