Venison Casserole: A Warming Autumn Classic (And a Book Update!)

This week I’m in the kitchen making one of my favourite hearty autumn dishes - a slow-cooked venison casserole. It’s rich, full of flavour, and such a comforting meal for colder days.

I start by browning the venison (I picked mine up fresh from my lovely local butcher, always best to support local!), then add pancetta, onions, carrots, celery, redcurrant jelly, and a splash of red wine before leaving it to cook low and slow. It’s the kind of dish that’s even better the next day and freezes brilliantly, perfect for family lunches or cosy weekends at home.
